There are so many categories on Amazon. I believe what Amazon does is to add more and more categories to this list anytime they discover, through their studies, how people have used search terms or keywords or keyphrases on their search bar to find books.
So when a particular keyword or keyphrase is becoming more prominent, they will add them to the already existing list of categories that authors can place their books on their stores.
The Amazon book categories also go a long way to show problem areas or are good examples of book titles or projects you can work on.

Go to https://www.amazon.com/
Ensure you are using the kindle or book section
Type a main Keyword into the search bar
Click the search handle to find out the book suggestions Amazon will throw up for you.
Click on one of the books, preferably the one on top.
Go down to see the categories where the book is listed on Amazon (they are highlighted in the image below).
Click on one of the categories. I clicked on ‘Spiritual Warfare’ and got this:
Highlighted are some of the sub categories on Amazon under the ‘Religion & Spirituality’ category. As I mentioned earlier, these are examples of new niches or emerging markets you can write and publish ebooks on. For example, from the image above, I can write carry out more researches to produce and publish ebooks on the topic of angels, devotional, meditations or spiritual warfare.
You should also observe that to the right of the image above are best sellers ebooks that are on sale on Amazon. These results can also help you to know topics authors are exploiting with their books and the book titles that are actually selling well on Amazon.
